Oriental Spinach-Sesame Salad

1/4 cup water
1 1/2 pounds fresh spinach, washed thoroughly and trimmed
1 tablespoon honey
2 tablespoons tamari sauce or soy sauce
3 tablespoons toasted sesame seeds, ground with mortar and pestle

Bring the water to a boil in a saucepan, toss in the spinach, cover, and cook about 30 seconds, until wilted. Drain the spinach and rinse it in a colander in cold water. Drain well, and transfer to a serving bowl. In a small bowl, combine the honey, tamari sauce, and sesame seeds. Pour this dressing over the spinach, toss, and serve. 4 servings.

Per serving: 4 g. fat, 97 calories, no cholesterol, 5 g. dietary fiber, 540 mg sodium.
