Roast Beef Hash

by Nikki Willhite
www.allthingsfrugal.com

You've had a great dinner. The roast came out beautifully. Now it is 2 days later, and the remaining meat is still sitting in your fridge. Tired of soup and pot pie? Here's a simple, economical recipe for hash. It doesn't get any easier than this!

Ingredients:

1 Cup cubed, cooked roast beef
2 Tablespoons margarine
2 Medium cubed raw potatoes
2 Tablespoons chopped onion
1/4 Cup Water
1/2 teaspoon beef bouillon granules
1/2 teaspoon salt
1/4 teaspoon pepper

Melt the margarine in a skillet on the stove. Add the remaining ingredients and mix. Cover and cook on low until the potatoes are tender (about 10 minutes). Uncover and cook 5 minutes longer.
