Perfection Salad

--Adaptation of a very old recipe--

1 package sugar-free orange gelatin 
1 cup boiling water 
1 cup cold water 
1 teaspoon salt 
1 tablespoon lemon juice 
1 cup shredded cabbage 
1/2 cup finely chopped celery 
1/2 cup shredded carrots 
1 tablespoon scallions, finely sliced 

Dissolve the gelatin in boiling water. Add the cold water, salt and lemon juice. Chill. When mixture is slightly thick, add the cabbage, celery, carrots and scallions. 

If you want to "impress" them, pour into 6 or 8 individual molds or ramekins and chill until firm. Garnish with a small "plop" of mayonnaise...this is very old-fashioned! 

6 to 8 servings
