Cajun Clark's Fortnight Recipe: 
Peach Cobbler

"Bring it on! Yes! Peach Cobbler! Don't forget the ice cream, or whip up some whipping cream for the 'real' thing. Makes your mouth-water just thinking about it, doesn't it?"

"And as if you didn't know, if peaches aren't your favorite fruit use whatever is. Remember to make any adjustments required to accommodate the change. But that's no hill to climb if you've been to a county fair and a goat ropin' or two." Caj. :) 

Easy Peach Cobbler 

1/4 teaspoon salt 
1/4 teaspoon cornstarch 
1/3 cup sugar 
1/4 cup water 
2 cups sliced peaches 
1/2 cup biscuit mix 
1/4 teaspoon vanilla 
2 tablespoons sugar
1/2 teaspoon lemon juice 

MIX first 5 ingredients. PLACE in casserole. MIX rest of ingredients; SPREAD over peaches. BAKE at 350°F for 40 minutes.
