Cantonese Chicken
Recipe of the week--
3 lb chicken breasts or chicken cut in serving size pieces (1.36 kg)
½ cup ketchup (125 ml)
3 tbsp soy sauce (50 ml)
3 tbsp liquid honey (50 ml)
2 tbsp lemon juice (30 ml)
2 tbsp water (30 ml)
Spray small roaster or 9x13" pan with PAM. Set chicken pieces in
pan.
Mix rest of ingredients. Spoon over chicken. Turn chicken & coat
bottom with sauce. Cover and marinate for at least 2 hours.
Bake, covered for 30 minutes @ 375°F (190°C). Baste chicken,
then bake uncovered for another 30 minutes.
