Broccoli Cheese Soup
1/4 cup chopped onion
1 tbsp butter or margarine
2.5 cups milk
1 tbsp chicken bouillon powder
10 oz frozen broccoli, chopped
1/2 tsp salt
1/8 tsp pepper
1 cup grated cheddar cheese Melt butter and sauté onions until clear. Add next 5 ingredients. Boil. Simmer until broccoli is cooked. Cool. Blend until you're happy with the consistency. Add cheese. Heat until melted. Makes 3.5 cups. Use low fat milk & cheese to reduce the fat content. Or leave out the cheese.
