Blueberry Dessert
4 c. blueberries
1 c. water
1 c. sugar
1/4 c. lemon juice
1/4 c. cornstarch
2 c. flour
2 sticks butter, melted
1 c. pecans, chopped
2 envelopes whipped topping mix
8 oz. package cream cheese - room temperature
1 box powdered sugar Mix
blueberries, water, sugar, lemon juice and cornstarch in a saucepan.
Bring to a boil, stirring constantly. Reduce the heat and cook, stirring
occasionally for 5 minutes or until thick and clear. Set aside to cool. Blend
flour, chopped pecans and butter. Spread in 9 x 13 pan. bake at
400° for 20 minutes. Cool. Follow
package directions to prepare the whipped topping. Beat the cream cheese
and powdered sugar together. Fold the whipped topping into the cream
cheese mixture, and spread over the baked crust. Spoon
the blueberry mixture on top. Refrigerate for several hours before serving.
