Apple Streusel Muffins

Recipe of the Week

Topping:
½ cup brown sugar (125 ml)
¼ cup flour (50 ml)
¼ cup butter or margarine (50 ml)

In a small bowl mix the topping ingredients with a fork. Set aside.

  
Muffins:
1 ½ cups flour (375 ml)
½ cup sugar (125 ml)
3 tsp baking powder (15 ml)
½ tsp salt (2 ml)
 
1 egg
¼ cup milk (50 ml)
¼ cup oil (50 ml)
¾ cup grated apple (peeled) (175 ml)

In a bowl mix dry ingredients. Make a well in the center.

In another bowl beat the egg until foamy. Blend in milk & oil. Mix in grated apple. Pour into well in dry ingredients. Stir just until moistened. 

Fill muffin cups 3/4 full. Sprinkle with topping.

Take @ 400°F (200°C) for 20 - 25 minutes. Makes 12.
